GREEN LENTILS WITH GROUND MEAT

Boil 2 cups of Yayla Green Lentils with 4 cups of water for 5 minutes and drain. In another pot, sauté 4 tablespoons of vegetable oil with 1 finely chopped large onion, add 1 tablespoon of tomato paste and 200 g of ground meat and continue to sauté. Once the meat is browned, add the boiled lentils, stir a few times, then add enough hot water to cover the lentils along with 6 cups of beef broth and simmer over low heat for about 10 minutes.

Just before turning off the heat, add 1 teaspoon of salt, red pepper and mint.

Serve.

COOKING SUGGESTION

Rinse thoroughly before cooking; no soaking is needed, it cooks in about 30 minutes.

Add the salt near the end of cooking so the skins do not split.
